With busy lifestyles we can often get stuck in a lunch rut. Every week, lunch quickly turns into a small snack, whatever you can find leftover at the bottom of your purse, or a lame packaged good from the convenient store. Here are some of the best lunch recipes that require almost no effort and will perk up your busy day – even if you’re eating it at your desk.

The Adult Lunchbox

This one is super simple. Basically just grab your favorite bite-sized foods and throw them together in a cute Tupperware. It’s compact, easy to put together and will definitely fill you up! Bless This Mess has a great list of hummus lunch boxes that are to-die-for! This one is my favorite.

Hummus Sandwich:
Whole grain sandwich bread
Hummus
Spinach
1 carrot, grated
4 tomato slices
1 avocado, sliced
Red onion, thinly sliced
Alfalfa sprouts
Salt and pepper to taste

Sides:
Grapes
Dill Pickles
Celery with Peanut Butter

The Wrap

Wraps are really easy to make, and can be consumed on-the-go if needed. They’re the ultimate no-fuss lunch item. This California Turkey Club Wrap from Tastes Lovely is one of the best.

Ingredients:
1 spinach tortilla wrap
Mayonnaise
Mustard
2 oz. turkey breast
2 slices of cooked bacon
2 oz. avocado, sliced
2 slices of tomato
1 cup of shredded iceberg lettuce

The Loaded Salad

I know, I know – salad. It’s boring. But it doesn’t have to be! If you can create the perfect salad, you’ll never want to eat anything else. And salads are basically just throwing ingredients into a bowl, right? No effort! This Shredded Brussels Sprouts Salad from What’s Gaby Cooking by Refinery29 is a game-changer for salads.

Salad Ingredients:
1 lb. Brussels sprouts
½  cup dried cranberries
1 avocado
¼  cup shredded Parmesan cheese

Lemon Vinaigrette Ingredients:
2 tbsp. lemon juice
6 tbsp. extra virgin olive oil
Salt and pepper

Directions:
Shred the Brussels sprouts into a bowl.
Add dried cranberries, avocado, and Parmesan cheese.
Whisk together the lemon juice, olive oil, and season with salt and pepper.
Drizzle the Brussels with the lemon vinaigrette and season with salt and pepper as needed.
