Healthy Eating On The Go: Breakfast


The busy lifestyle of a female entrepreneur can get so hectic that we forget to eat, which should NEVER happen! Eating is the most important part of your day, and you shouldn’t consider it lightly. Here are some super quick and easy recipes to ensure you’re getting the nutrients you need in the time you have.

Yogurt Parfait

This is definitely the easiest breakfast. Just layer Greek yogurt, oatmeal and your choice of fruit – I love blueberries and raspberries – in a jar and go! You can also add almond butter for some extra flavor and nutrition!

Overnight Oats

In a jar, add milk, oats, Greek yogurt and any additional items you would like (I love using chia seeds, maple syrup and cinnamon). Shake the jar to combine all ingredients. Remove the lid and add any last-minute pieces you want, like fruit or peanut butter. Let the jar sit in the fridge overnight and you’re good to go in the morning!

Baked Oatmeal Breakfast Bars

This recipe from AllRecipes is so delicious and irresistible – and so easy to just grab and go in the morning. Preheat the oven to 350 degrees. Combine 2 cups oats, ⅓ cup brown sugar, 1 tbsp. white sugar, 1 ½ tsp. baking powder, ½ tsp. salt, and ½ tsp. cinnamon. In a separate bowl, whisk 1 cup milk, 2 eggs, 2 tbsp. canola oil, and 1 tsp. vanilla extract. Combine the egg and oats mixtures and set aside for about 20 minutes. Spread oats mixture into a square, non-stick pan.

Avocado Toast

This is such an easy and truly delicious breakfast to make! Just grab some toast and top it off with your favorite concoction of avocado. This recipe from Real Simple is super easy and super delicious. All you have to do is mash the avocado onto the toast, then top it with a drizzle of olive, lemon juice, a sprinkle of salt and red pepper flakes.
